Phainti Hui Coffee — Beaten Coffee, Dhaba Style
The whipped instant-coffee winter ritual: three spoons, five minutes of beating, café foam at home. Serves 2.

Ingredients
- 2 tsp Instant coffee — buy at AkBaat
- 2 tsp Sugar — buy at AkBaat
- 2 tsp Water
- 2 cups Hot milk
Instructions
- In a mug: coffee, sugar, water — equal spoons.
- Beat with a spoon 4-6 minutes until pale caramel and creamy. Arm effort is the recipe.
- Divide the paste between two cups.
- Pour hot milk over, stirring as you pour — the foam rises on its own.
- Dust with a pinch of dry coffee for the café finish.
Before international coffee chains reached Pakistan, hostels and dhabas had already perfected the whipped coffee — by spoon, by arm, by winter necessity.
Serving Suggestions
Winter evenings, exam nights, and the guest who "doesn't drink chai". Pairs with Cake Up or toast.
Storage
The beaten paste (without milk) refrigerates a week in a sealed jar — pre-beat Sunday, coffee-shop mornings all week.
Cook's Notes
Only instant coffee whips this way (its processing is the chemistry). The sachets make single trials cheap before the jar commitment.
