  1. In a mug: coffee, sugar, water — equal spoons.
  2. Beat with a spoon 4-6 minutes until pale caramel and creamy. Arm effort is the recipe.
  3. Divide the paste between two cups.
  4. Pour hot milk over, stirring as you pour — the foam rises on its own.
  5. Dust with a pinch of dry coffee for the café finish.

Before international coffee chains reached Pakistan, hostels and dhabas had already perfected the whipped coffee — by spoon, by arm, by winter necessity.

The beaten paste (without milk) refrigerates a week in a sealed jar — pre-beat Sunday, coffee-shop mornings all week.
