Doodh Patti — Proper Milk Chai
The all-milk chai of Punjab's dhabas: three ingredients, one technique that matters. Serves 2.

Ingredients
- 2 cups Full-cream milk
- 2 heaped tsp Danedar tea — buy at AkBaat
- to taste Sugar — buy at AkBaat
- 2 pods Green cardamom, bruised (optional) — buy at AkBaat
- splash Water
Instructions
- Bring milk with a splash of water to a rolling rise in an open pot.
- Add tea and cardamom; lower flame and simmer 3-4 minutes as the colour builds to caramel-brown.
- Add sugar; one more minute.
- The dhaba move: ladle and pour back from height a few times — aeration is the secret body.
- Strain into cups. Serve with something from the biscuit tin.
Doodh patti — milk-only chai — is Punjab's answer to espresso: small, strong, and non-negotiable at 7 AM and 4 PM.
Serving Suggestions
Sooper or Butter Puff for dunking; rusk if the household keeps tradition. Evening round pairs with Slanty and cricket.
Storage
None. Chai is a fresh-only performance; reheated chai is a different, sadder drink.
Cook's Notes
The danedar cut exists for this method. The height-pour aeration is genuinely functional, not theatre. And the pot rest before straining settles leaves without a fine strainer.
