Kheer — Friday's Rice Pudding, From Scratch or Mix
Slow-milk kheer both ways: the two-hour tradition and the honest 20-minute mix route. Serves 6.

Ingredients
- 100g Broken/pona rice — buy at AkBaat
- 1.5 litres Full-cream milk
- 3/4 cup Sugar — buy at AkBaat
- 4 pods Green cardamom, crushed — buy at AkBaat
- 2 tbsp Khopra, grated (optional) — buy at AkBaat
- 1 pack OR: Kheer mix (the 20-minute route) — buy at AkBaat
Instructions
- Scratch route: soak rice 30 minutes, then simmer in milk on low, stirring every few minutes, 60-80 minutes until rice melts into the milk.
- Add sugar and cardamom in the last 15 minutes (sugar earlier slows the rice).
- It's done when a spoon-trail holds on the surface; it thickens further cooling.
- Mix route: follow the pack with full-cream milk — the mix assumes it — same cardamom finish.
- Chill 4+ hours in clay bowls if you have them; garnish khopra and pistachio.
Kheer is the dessert of Fridays, milads and good news. Both routes below are honourable; the milk quality decides more than the method.
Serving Suggestions
Cold, in small bowls, garnished properly — the khopra and pistachio finish is what photographs. After qorma, nothing else is expected of you.
Storage
Three refrigerated days, tightening daily — loosen with a splash of cold milk when serving day-two-plus.
Cook's Notes
Low flame and presence: kheer punishes the unwatched pot with a scorched bottom that flavours everything. The mix route exists precisely for days without ninety minutes of presence.
